Salads don't have to be boring. You can get great textures and new flavors by being creative with the ingredients you use. Micro greens are baby green vegetables. The tiny stems and leaves pack lots of good healthy flavor. I love to use micro greens in salads and think you will too.
1 bunch of Micro greens
1 -2 medium ripe avocados - dice them small
I used chipotle flavored olive oil,you can add a few dashes of chipotle powder to get the same result.
Salt and pepper to taste
dice the ripe avocados small. Place them in a medium bowl with the bunch of cleaned micro greens. Slowly Drizzel your olive oil over the greens. Squeeze half of a lemon in your bowl. Add a dash of salt and pepper. Mix the ingredients with your hands. The lemon and avocado will start to create a creamy texture that is an amazing salad dressing.
