Apricots are one of my favorite fruits because they offer up a sweet and healthy snack all wrapped up a tiny juicy package. Apricots offer many nutrients including vitamin A, vitamin C, potassium, copper, fiber, and numerous antioxidants. Some of these antioxidants have been linked to decreased heart disease, reduced inflammation, and protection of eyesight. Not only are these bad boys healthy, but they are delicious and always bring me great memories of summer. We use to walk my uncles orchards in the summer heat, and pick the low-hanging delicious pale orange fruits. One way to bring these summer fruits into more meals is by making this scrumptious apricot chicken meal for dinner. See the recipe below!
2 tablespoons olive oil
2 pounds chicken tenderloins
Salt and pepper
1 onion, chopped
2 tablespoons cider vinegar
12 pitted apricots, chopped
2 cups chicken broth
1 cup apricot all fruit spread
3 tablespoons chopped flat-leaf parsley
Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper.
Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes.
Add vinegar to the pan and let it evaporate. Add apricots and stock.
When stock comes to a bubble, add preserves and stir to combine. If you're in a hurry use an organic all fruit spread from your local market, or try our fresh apricot preserves recipe below!
Cover pan, reduce heat and simmer 10 to 15 minutes.
Serve chicken with a sprinkle of chopped parsley.
