Beets are one of those vegetables that grew on me, and ever since I can not get enough of the earthy and bright red vegetable. I love the versatility of a beet; from salads, to entrees, to even juices. They offer up an appealing color variation to any meal and also offer a magnitude of health benefits. Beets have been found to reduce coronary artery disease, strokes, and lower cholesterol levels. I actually prefer my beets in recipes where they are allowed to shine and are not overpowered by other flavors. With that in mind, I have included a recipe that allows the beets to be the star of the show. Hope you enjoy!
