Red Onion Steak Fajitas
Nothing is more satisfying than the sizzling sounds of veggies being cooked with steak. What a wonderful meal any day of the week. Here is a quick and easy way to make this delicious dish:
12 oz. Flank Steak
1 Red Onion, cut into strips
1/2 Green Pepper, cut into strips
1/2 Red Pepper, cut into strips
2 Tomatoes, diced
2 cups Romaine Lettuce, shredded
1/2 cup Fresh Salsa
1 T Chili Powder
1/2 tsp. Oregano
1/2 tsp. Paprika
1/4 tsp. Garlic Powder
1/4 tsp. Cumin
1/8 tsp. Salt
1/8 tsp. Pepper
Combine the chili powder, oregano, paprika, cumin, garlic powder, salt and pepper and coat the meat. Let sit for at least an hour or overnight in the fridge.
In a nonstick frying pan, add some olive oil and cook the steak over medium heat until seared on both sides, about 2 minutes each side. Remove from the pan and finish cooking in the oven (at 350 for 8-10 minutes).
Meanwhile, add a little more olive oil and the onion and pepper strips to the pan and sauté until the vegetables are tender, about 5 minutes. Remove the meat from the oven, and let it sit for at least 5 minutes. Then, cut it into 1-inch pieces.
Serve with remaining toppings and enjoy, you can put it all on top of some fresh tortillas, or eat the delicious mixture all by itself!
