Mint and Lemon Beet Salad:
6 fresh beets
6 tablespoons chopped fresh mint
6 tablespoons chopped fresh chives
6 teaspoons lemon zest
3 teaspoons chopped preserved lemon, optional
Salt, to taste
Pepper, to taste
6 teaspoons olive oil
3 teaspoons lemon juice
1. Roast beets by scrubbing the dirt off and trimming the stems. Wrap each beet in foil and place in a glass baking dish. Place in 400 degree oven and roast for 1 hour or until soft.
2. When beets are cool enough to handle, slip off the outer skins. Then grate beets using the largest holes on your grater into a bowl.
3. Toss beets with mint leaves, chives and lemon zest. Season salad with salt and pepper.
4. Dress the salad with oil and lemon juice. Enjoy!
